RECIPES

(This recipe is from Jean, from Urbana-Champaign, who celebrated a 100-lb.
weight loss last week!)
 *****Pumpkin Angelfood Cake
12 servings at 3 approximately 3 points each

1 15-oz can of pumpkin (straight pumpkin, not pie filling)
1 box one-step angelfood cake mix (the "just add water variety")
1 Tbsp pumpkin pie spice
1/2 the water called for on the cake box

Mix the pumpkin with 1/2 the water (1/4 of the box's original amount) and
spice. Add cake mix and blend. Add remaining water. Mix well but be careful
not to overbeat. Bake as directed.Turn off oven and leave the cake in to
cool so it doesn't fall. Top with a dusting of powdered sugar and FF whipped
topping.

Variations (instead of pumpkin):
You can make this with a large can of crushed pineapple, slightly drained,
adding no water & no spice to the mix (12 at 3 points each).
You can also make it with a can of any type of lite pie filling, adding no
water and no spice to the mix (12 at 4 points each).

*****Taffy Apple Cheesecake
8 servings at 5 points each

2 8-oz pkgs Philadelphia FF cream cheese
1 (4 serving) pkg Jello sugar-free instant vanilla pudding mix
2/3 C, Carnation nonfat dry milk powder
1 C. unsweetened apple juice
1/4 C. Cool Whip Lite
2 Tbsp caramel syrup
1 C. (2 small) unpeeled, finely diced red apples
1/4 C, (1oz) chopped dry roasted peanuts
1 (6 oz) Keebler graham cracker piecrust

In a large bowl, stir cream cheese with a spoon until soft. Add dry pudding
mix, dry milk powder, and apple juice. Mix well using a wire whisk. Blend in
Cool Whip Lite and caramel syrup. Gently stir in apples and 2 Tbsp peanuts.
Spread mixture into piecrust. Evenly sprinkle remaining 2 Tbsp peanuts over
top. Refrigerate at least 1 hour.

*****Diet Cola Cake
16 servings at 3 points each (12 at 4 points each). This is based on
calculations on my cake mix--perhaps you can find a lower calorie variety.
Also try yellow cake with diet lemon-lime soda.

1 box chocolate cake mix (the kind where you usually add eggs and oil)
1 can Diet Cola (some variations call for using just 10 oz)
Blend dry mix with the Diet Coke and bake as directed on the box. Serve with
a dab of FF whipped topping.

*****Crockpot Bar-B-Q Pork
(while we're on Diet Coke recipes)
8 servings at 4 points each

2 lbs boneless pork top loin
1 C. chopped onion
3/4 C. diet cola
3/4 C. barbecue sauce

Combine all ingredients in a crockpot. Cook covered on high for 5 to 6
hours, or until meat is very tender. Drain and slice or shred pork.

*****Raspberry Waffle Delight
1 serving; 3 points

2 LF Eggo waffles
1 Tbsp Smuckers spreadable fruit jam
1/4 C. FF vanilla yogurt
1/4 C. fresh raspberries
1 Tbsp FF whipped topping

Toast waffles; spread with jam, then with yogurt. Top with the raspberries
and whipped topping.

Enjoy & remember:
"Others can stop you temporarily, but only you can do it permanently."
