Turkey tips and recipes:

****Sam's Club is carrying "turkey mignon" again. These are delicious
turkey breast steaks with a piece of bacon wrapped around them.  They
have a little thermometer in them that pops out when they are done.
They are really delicious and only 4 points. They come six in a bag
for about $9. You can find them in the frozen food in the area by the
bags of chicken breast. They might also be available at Super
Walmart. These can be made in the oven, in a skillet, or on the
grill. (About 8 minutes in a George Foreman grill.)

****Mejer is carrying Carolina Best turkey breast. These whole
breasts are frozen in a cooking bag and go straight from freezer to
oven. They are juicy and so easy to prepare. The nutritional
information figures out to 3 points for 4 ounces.

****Any turkey breast can be prepared in a crockpot. Just put about
1/2 inch of water in the crockpot, put in the turkey breast, and
season with a packet of dry ranch salad dressing and/or taco
seasoning sprinkled over the top. If it is frozen you can cook it on
low about 8 hours. If it is thawed it will be done in about half that
time.

****Most people are not aware that regular ground turkey has as much
fat as ground beef, because the skin is included in the grind. The
only time ground turkey offers you a points savings is when it is
lean or ground turkey breast.


***Easy Turkey Pot Pie
6 servings at 5 points per serving

1 package frozen mixed vegetables, thawed
12 oz. cooked turkey breast, diced
1 can Campbell's 98% fat-free cream of chicken soup
1 cup Reduced-Fat Bisquick baking mix
1/2 cup fat-free milk
1 egg

Heat oven to 400 degrees. Stir thawed vegetables, diced turkey, and
soup in ungreased 9-inch pie plate. Stir Bisquick, milk, and egg
together.  Pour/spread the Bisquick mixture over the other
ingredients. Bake about 30 minutes or until golden brown.

***Tex -Mex Turkey Tacos
6 servings at 5 points each

1/2 cup chopped onion
1 8-oz can of tomato sauce
1/2 cup water
1 to 2 Tbsp. chili powder, to taste
1 tsp. ground cumin
1/2 tsp. salt
3 cups shredded turkey breast
6 1-point flour tortillas (like Tumero's Homestyle Kitchen- Honey Wheat)
6 oz. light cheese
chopped lettuce
chopped tomato
salsa

Brown onion in cooking spray. Add tomato sauce, water, and spices.
Bring to a boil, then reduce heat and simmer for 2 to 5 minutes. Stir
in shredded turkey and cook until heated through.

Place 1/2 cup of turkey filling on each tortilla. Top with 1 oz
cheese, veggies, and salsa.
Serve with salad and fat-free refried beans for a filling meal.
