[CHANGES] 3 Quick things and Broccoli Salad

Friends,

I found a great paved bike path that runs 45 miles through the forest of 
southern Illinois. It is called "Tunnel Hill Bike Trail." My husband Kevin 
and I rode 20 miles of it when I was down there visiting my son last 
weekend. The tree canopy covered path ran next to a small river. We saw blue 
birds, deer and lizards and only one tiny piece of trash. What a joy! A 
little more peaceful than riding on the hot shoulderless highwayd that I 
took to Villa Grove last week. We hope to find time to camp near there this 
weekend and ride the length of it. I hope you have a wonderful weekend too.

3 Quick Things and a recipe for  Marinated Broccoli-Corn Salad

1. "Fall seven times. Stand up eight." (Japanese Proverb). Don't just lie 
there on the ground feeling like a failure. There is still plenty of summer 
left. Let's enjoy the season and all of the blessings that make getting 
healthy easier. What is your plan? Are you willing to stand up and take the 
first step of it?  If Weight Watchers is part of the plan…

…Weight Watchers is (of course) closed this Friday, July 4. I'll be there on 
Wednesday and would love to see you at that time. (9:30, Noon, 5:15).Regular 
Friday members (their file is found in the Friday file box) will not be 
considered "missed" for the week -- but are welcome to come in at another 
time if you want.

2. My new sessions of Art Classes start this week and next and I have a few 
spots left in each class. If you are interested let me know. (Collage for 
the Soul, Tuesday 7-9pm, starts July 1,  5 weeks), (Drawing on the Right 
Side of the Brain, Monday 7-9pm, starts July 9, 5 weeks).

3. There is a u-pick berry farm in White Heath. It is called Pontius Berry 
Farm. My friend Carol said she pick 4 delicious pounds of blueberries in one 
hour, for four dollars, and that it was a pleasant experience. I understand 
that they have things for the kids to do and a variety of other selections

Marinated Broccoli-Corn Salad
Yield: 6 servings (serving size: 1 Cup)
Points: 1

3 1/2 Cups Fresh Broccoli Florets
1/4 C Rice Vinegar
1 TBSP Dijon Mustard
1 TBSP Honey
1/4 tsp Salt
1/3 tsp Pepper
1 (16 ounce) package frozen baby white corn, thawed
1/2 C Chopped Red Bell Pepper
1/2 C Finely Chopped Red Onion

1. Steam broccoli florets, covered, 6 minutes or until crisp-tender. Drain. 
Rinse under cold water; drain well.

2. Combine vinegar and next 4 ingredients in a medium bowl; stir well. Add 
broccoli, corn, bell pepper, and onion, stir well. Cover and chill at least 
3 hours, stirring occasionally.


Per serving: Calories 105, 1 gram fat, Fiber 3.9 grams
