Bob:

The Linux distros Ubuntu (and Edubuntu) have OpenOffice on them which
includes Writer which works very much like MS-Word. There is also a gedit
which is a simple, easy-to-use text editor.

If I were to take notes at a meeting, I would just send myself a message in
a web-based e-mail program (I use Gmail). Firefox is also on Ubuntu which
appears identical to Firefox on Windows and Mac.
