[CHANGES] Food Drawer and Zucchini Bread

Hello, all you health-conscious people!


This message contains:
1. a list of items that Weight Watchers members keep in their "food
drawer" at work
2. a recipe for Zucchini Bread -- and what could be better than
zucchini bread but --
3. a recipe for Chocolate Zucchini Bread
4. my current schedule. Weight Watchers is offering free registration Sept.1 
fhrough Oct. 12. Is that what you've been waiting for?

I was recently on the web at www.weightwatchers.com. You do not have
to be a member or pay any fee to use most of the website, although
there is a fee for the "E-tools." Many people don't mind paying it to
be able to journal on-line and use the other many tools that the site
offers. My favorite place on the site is the community message
boards, especially the one called "Food Talk." It is absolutely free!
Here is a list I compiled from that message board of favorite at-work
foods for those without a refrigerator. These are great in-the-car-snacks 
too.

Food Drawer at Work

- snack cup of applesauce
- fruit cup
- packets of fat-free salad dressing (for lunches out)
- packets of lowfat mayonnaise
- small pop-top can of green beans
- instant oatmeal
- instant grits
- package of Snackwell's vanilla sandwich cookies
- Miss Meringue cookies
- cup of instant soup
- Weight Watchers 2-point bars
- 94% fat-free microwave popcorn
- Pria bars
- Kashi bars
- pretzels
- an extra water bottle
- oat bran to add to yogurt
- chocolate Velamints
- baggie of premeasured dry cereal (Puffins, Kashi, bite-sized shredded 
wheat)
- low-sodium boullion
- sugarless gum
- Healthy Choice Vegetable Soup
- canned beets
- Crystal Lite
- Weight Watchers Fruitees candy
- Welch's fat-free fruit snacks
- tuna salad in a bag
- canned pineapple
- fat-free saltines
- small box of raisins
- popcorn cakes
- mini rice cakes
- can of chickpeas
- fat-free or low-fat Pringles
- peanut butter
- Viactiv Chocolate Calcium Chews
- multigrain crispbread or other low-point crackers
- toothbrush and toothpaste
- tea bags and Splenda
- paper plates, can opener, salt and pepper, plasticware, napkins


Zucchini Bread
servings: 24
estimated WW Points per serving: 2

2 cups shredded zucchini
2 cups sugar
2 cups all-purpose flour
3 large eggs
1 cup unsweetened applesauce
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
3 tsp ground cinnamon
3 tsp vanilla extract

Preheat oven to 350 degrees. Spray 2 loaf pans with non-stick spray.
In a large bowl combine flour, baking powder, baking soda, cinnamon,
and salt. Set aside.

In a medium bowl, whisk together sugar, eggs, applesauce, oil, and
vanilla. Stir in zucchini. Add wet ingredients to dry ingredients.
Stir until just moistened.

Spread batter evenly in prepared pans. Bake for 50 minutes, or until
a toothpick inserted in center of loaf comes out clean. Cool 5
minutes in pans. Remove from pans and let cool on wire rack before
serving.

Alternatively you can make 24 muffins. Check for doneness at 35 minutes.


Chocolate Zucchini Bread
Servings: 24
Estimated WW Points per serving: 3

2-1/2 c all-purpose flour
1/2 c unsweetened cocoa powder
1-1/2 t baking powder
1 t baking soda
1 t cinnamon
1/2 t salt
1-1/2 c sugar
1/2 c egg substitute
1/2 c unsweetened applesauce
1/3 c oil
2 t vanilla
2 c packed, grated zucchini
1/2 c mini chocolate chips

Preheat oven to 350. Spray 2 loaf pans with non-stick spray. In a
large bowl combine flour, cocoa, baking powder, baking soda,
cinnamon, and salt. Set aside.

In a medium bowl, whisk together sugar, egg substitute, applesauce,
oil, and vanilla. Stir in zucchini. Add wet ingredients to dry
ingredients. Stir until just moistened. Fold in chocolate chips.

Spread batter evenly in prepared pans. Bake for 50 minutes, or until
a toothpick inserted in center of loaf comes out clean. Cool 5
minutes in pans. Remove from pans and let cool on wire rack before
serving.
