Hello All,
1) The Zucchini Bread recipe that I send out earlier did not include oil in
the ingredients list but did include it in the mixing directions. The
recipe DOES NOT call for oil. It has applesauce instead of oil. The complete
correct recipe is at the end of this message.
2) We have FREE Registration at the Champaign Weight Watchers Center Sept. 1
- Oct 6.
3) Goal Weights and Maintenance. Weight Watchers has determined an
appropriate goal-weight range according to your height. This chart is in
your Weight Watchers "Welcome" book. Within that range, you set your
specific goal. If your healthcare provider recommends another appropriate
range or goal, WW will accept that. Once you are "at goal," you are
eligible for Lifetime membership in WW after six weeks of paid maintenance.
If at the end of the six weeks you are no more than two pounds above your
goal you are awarded Lifetime Membership privileges. As a Lifetime member,
you may attend meetings free as long as you remain within two pounds of your
goal and you weigh in at least once every calendar month. If you miss a
month, you pay for the following month, but then you are back in "good
standing" for free attendance. If you weigh in more than two pounds above
your goal you pay for meetings until you get back to within that two pound
float. However, you never pay missed-week fees; you pay only the weekly fee
any time that you do come. (This is my interpretation of the rules and
benefits -- please consult official Weight Watchers material for the
official regulations.)
4) There is no point spending energy worrying about if you will ever get to
goal and maintain it. Instead your focus should be on how to eat healthy
and determining what you need to do this -- today. The weight will take
care of itself if you are taking care of yourself. A reasonable weight is
the result of reasonable diet and reasonable exercise. Do you need help
figuring out what is reasonable? That is what I am here for. That is what
support groups can help with. I need help sometimes myself. Because we have
so much "invested" in our body image and our food consumption; because it is
so easy to focus on what we are doing wrong; because it is so easy to get
out of whack in this society -- these are some of the reasons that a
structure and a support group can help.
5. You can attend any meeting of Weight Watchers -- and because of crazy
schedules I know that some of you need that flexibility. But I strongly
encourage you to commit as much as possible to attending the same meeting
every week. It is very beneficial to me and it can help you to be a part of
a group where you feel comfortable enough to ask for the support that you
need.

Zucchini Bread
servings: 24
estimated WW Points per serving: 2
2 cups shredded zucchini
2 cups sugar
2 cups all-purpose flour
3 large eggs
1 cup unsweetened applesauce
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
3 tsp ground cinnamon
3 tsp vanilla extract
Preheat oven to 350 degrees. Spray 2 loaf pans with non-stick spray.
In a large bowl combine flour, baking powder, baking soda, cinnamon,
and salt. Set aside.
In a medium bowl, whisk together sugar, eggs, applesauce, and
vanilla. Stir in zucchini. Add wet ingredients to dry ingredients.
Stir until just moistened.
Spread batter evenly in prepared pans. Bake for 50 minutes, or until
a toothpick inserted in center of loaf comes out clean. Cool 5
minutes in pans. Remove from pans and let cool on wire rack before
serving.
Alternatively you can make 24 muffins. Check for doneness at 35 minutes.
