Greetings friends,

Last week I told you I was going to be sending out a “Changes” newsletter 
every Saturday. Can you believe I missed my first deadline?! I’m plugging 
ahead with my plan none the less: One week a motivational message; the next 
week with recipes, tips, updates, and offers.

****RECIPES AND SHOPPING TIPS****
The recipes I’m going to be offering you are tried and true from my kitchen 
to yours. Many people tell me that they want to cut down on meat eating, but 
they find “vegetarian” recipes daunting. This week’s recipe for Wholly 
Delicious Spinach Salad is a great introduction to a delicious way to use 
tofu.

Tofu has no flavor on its own. In this recipe I used a very small amount of 
bacon (as well as other surprising ingredients) to flavor the tofu. The 
recipe serves six, but the topping stores easily if you are cooking for one 
or two.

I serve it with Ken’s Steak House Fat Free Raspberry Pecan dressing, which 
is a bottled dressing I just love. (I buy it at Schnucks but it may be other 
places as well. Let me know where you find it and I’ll pass that along.)

I’ve also included a recipe for Seafood Baked Potato. This is definitely 
family friendly: economical, easy to prepare, and delicious.

You can now find very inexpensive and easy to prepare shrimp in your 
grocer’s frozen seafood section.

recipes and click on the “tips” link near the bottom of the page to read 
about buying these shrimp (#8). There is a “pdf file” if you would like to 
print the recipes.

sorts recipes, works with a web page, and analyzes for nutritional content?
